Location: 180-350 mt. s.l.m., marly-arenaceous hilly terrain.
Yield per vine: 1,5 kg./ceppo.
Collection mode: manual in boxes.
Vinification: after a drying in the plant for 30/40 days there is a soft pressing of the whole grapes and a subsequent static decantation at 8 ° C for 24 hours. After separation from the deposit, fermentation begins at natural temperature with indigenous yeasts.
Aging: 10 months in tonneaux. Then bottled for 4 months before sale. In years with favourable weather conditions, a percentage of the wine produced comes from botrytised grapes.
Organoleptic characteristics:
Color: golden yellow.
Bouquet: pleasant, with bouquet that recalls notes of apple, pear, apricot.
Taste: sweet, slightly tannic on the palate.
Pairings: typical dessert wine that goes well with dry pastries. If aged it is interesting also combined with hard and long matured cheeses.
Serving temperature: 12 °C.
